This is a full-flavoured and substantial soup with infinite variations. Sometimes we include potatoes or pasta, and sometimes we add only beans, vegetables and good-quality chorizo.
Ingredients & quantities (Included in delivery)
- 2 chorizos or other spicy sausages
- 1 medium onion, chopped
- 2 large carrots, sliced
- 1 medium parsnip, sliced
- 1 small zucchini, in pieces
- 6 large tomatoes, in chunks
- 400g tinned white beans, rinsed and drained
- 3 celery stalks, finely chopped
- A large handful of spinach leaves
- 3 tbsp pesto
- Fresh flat-leaf parsley, for garnish

- 2 tbsp olive oil
- 1.5l chicken or vegetable stock
- 50g spaghetti, (optional)
- 1 large garlic clove, crushed
- Sea salt
- Freshly ground black pepper
