Chicken & Broccolini Stirfry

Forget the packaged stir fry sauces, this simple recipe uses fresh ingredients such as garlic, ginger and red onion as a more nutritious way to add flavour to your stir fry. While we've pre-selected capsicum and broccolini, you can add a variety of different vegetables to this dish so it's a great way to use up any left-overs in the fridge.
Ingredients (included in delivery)
- 750g chicken thigh fillets, sliced thinly
- 3cm ginger, peeled and finely chopped
- 2 cloves of garlic, chopped finely
- 1 red onion, peeled and cut into wedges
- 1 red capsicum, cut into strips
- 1 bunch broccolini, cut in half crossways, then cut in half lengthways also
- ΒΌ cup oyster sauce
- 1 cup white rice

- 2 tbsp soy sauce
- 2 tbsp olive oil

Instructions

1. Cook rice
Bring a saucepan of water to the boil. Add rice and cook until tender.
Drain and set aside. -
2. Cook chicken
Meanwhile, place a large wok or frying pan over a medium to high heat.
Add the olive oil. Stir fry the chicken for around 8 minutes until browned
and cooked through. Set aside. -
3. Add vegetables
Lower the heat to medium. Add ginger and garlic, stirring constantly for
1 minute. Place vegetables in wok and stir fry for 1-2 minutes. Add the
sauces and cooked chicken to the wok. Stir fry until hot. -
4. Serve
Serve stir fry in bowls with rice.
